Palo Cortado is a rare example of the union of two types of Jerez-style wine. The wine first ages under a flor crust like a Fino. After a while, however, the crust dissolves, which prevents contact with air, and the wine begins to behave like an Oloroso, i.e. with contact with air. The aroma of Palo Cortado from Bodegas Maestro Sierra is very expressive, with a scent of cinnamon pastry, roasted chestnuts, dried mushrooms, walnuts, tobacco and a delicate hint of maple syrup. On the palate it balances between almost sweet tones and light acidity with a touch of bitterness. In the flavour of this sherry one can detect roasted coffee beans and hazelnuts, walnuts and almonds. It has delicate hints of orange peel and herbal tones. A deep and long-lasting finish is a given with this exclusive sherry. The sherry is dry and slightly sweetish.  Bodegas El Maestro Sierra is among the special gems of the Jerez region. The cellars were founded in 1830 by José Antonio Sierra and are now cared for by his descendants Pilar Plá and María del Carmen Borrego. Mother and daughter continue the family tradition and hand production in very limited quantities, which makes this sherry a highly prized gem for connoisseurs of this type of wine.   It pairs wonderfully with meats, such as game.
