A dry wine aged in American oak casks under a flor veil, followed by oxidative ageing. Grape variety: 100% Palomino .    The uniqueness and fascination of Amontillado Viejo El Maestro Sierra is multiplied when, to the fusion of two types of ageing - biological under the flor veil and oxidative - we add the long passage of time. In the case of Amontillado 1830, the period of oxidative ageing is extended by more than 30 years. During this long period, the wine has ample room to mature.    This Amontillado is preserved in the very original casks that were built and signed by José Antonio Sierra, the winery's founding master cooper, at the beginning of the 19th century. These are original casks of fully practical use and outstanding craftsmanship with a capacity of 2,000 litres,    El Maestro Sierra is a sherry producer based in Jerez de la  Frontera in Andalusia, Spain. It is well known for having some of the oldest soleras (solera means „on the ground“ in Spanish and refers to the bottom level of a set of casks or other vessels used in the process) in the region, some almost 100 years old. The company produces a range of sherries, including the styles Fino, Oloroso, Amontillado and Palo Cortado.    On the nose it has clear references to its Fino past. Wet sand. There is a hint of yeast, which blends nicely with pastry notes and dried apricots. Also faint farmyard notes (wet sheep's wool). Aromas of marzipan, hazelnut and candied orange intertwined with walnut cake. Light tobacco and hints of cigar boxes.    The palate is dry, with high acidity. It is incredibly silky, for a few moments almost lacking, before regaining strength and becoming frankly steely. Leathery. Intense notes of brine. Orange peel. A smoky finish with walnuts, light notes of roasted coffee beans and the faintest hint of pepper.  It is wonderful to enjoy with aged cheese or parmesan, with soups, broths, white meat, fatty fish, mushrooms and semi-hard cheeses, and with vegetables such as asparagus and artichokes.    We recommend serving between 13-14°C.    Grape variety: Palomino     Alcohol content 19%    Bottle size: 0.75l    Origin: Spain, D.O.
