A very special and exclusive sweet wine made from the eponymous selection of grapes, which are properly sun-dried and turned into wine using traditional craftsmanship. They age for many years in American oak using the traditional soleras and criaderas system. This is a creamy, velvety wine with a balance of sweetness and refreshing acidity. Pedro Ximénez is obtained from the eponymous grape variety, which is left to dry in the sun. In making the wine, a very sweet must is obtained, which then undergoes fermentation with fortification, resulting in a wine of a very dark ebony colour with crimson glints, bouquets of dried grapes and toasted notes of caramel and honey.
