Blue mould sheep's cheese with the 'Eusko Label' is made from the milk of Basque sheep. Urdina is a blue cheese with a soft texture and a washed rind, made from pasteurised latxa sheep's milk.

The uneven ripening in the caves gives it a greenish colour rather than the traditional blue, but gives it its characteristic taste. The rind is often rubbed with water and salt, which encourages the growth of various bacteria; it takes on a reddish hue over a month in cave conditions. After this month, the cheese is wrapped in aluminium foil and transferred to another cold room for a gentle second maturing.

The cheese has the taste of blue cheese but is soft, not as strong as Cabrales or Picón, but very tasty. In short, we are looking at a wonderful blue cheese with a rich flavour that is great for those who can appreciate cheeses with their own character.
