The Don PX wines originate from the freshest, sweetest vintage wines of Toro Albalá. The chosen Pedro Ximénez grapes were handpicked and left to dry in the sun on straw mats for about a week. After that, they were squeezed and, when the ideal balance of sugar, alcohol and acidity was attained in the tank, the fermenting liquid was halted with Aguardiente (a transparent regional brandy) to stop the process. The strong wine was poured into stainless steel containers and large cone-shaped vessels called tinajas that are typical of the local area. The wine is left to settle naturally due to its richness, avoiding filtration. It is then bottled directly from these containers.

These wines aren't aged in barrels or mixed, so they're incredibly pure, fruity examples of the Pedro variety. They capture all of the grape's delicious raisin and honey flavours, as well as its sharp acidity, before it reaches the stage known as rancio. The golden liquid shines with a rich blend of fig, honey, and muscatel raisin flavours, ending on a warm, sweet aftertaste. Despite its high sugar content, it maintains a wonderfully fresh taste.
