Grape variety:
The base is Tempranillo, complemented by the Cabernet Sauvignon variety. In some vintages, small amounts of Merlot or Malbec are also added, depending on the character of the harvest and the winemaker's decision. The cuvée varies slightly each year to best reflect the given vintage.
Vineyard:
The grapes come from a unique terroir around the Duero river. The soils are very varied, made up of layers of sandstone, basalt and limestone, which give the wine depth, structure and minerality. The winery farms approximately 140 hectares of vineyards. The vines are over 30 years old, with some plots (e.g. Ontañón) dating back to 1910. The altitude of the vineyards helps preserve freshness and balanced acidity.
Production and ageing:
Fermentation takes place at a controlled temperature in large wooden vats using indigenous yeasts. Malolactic fermentation takes place in smaller wooden barrels. This is followed by one of the longest ageing processes of any red wine. The wine ages for approximately 10 years in various types of vessels, combining French and American oak. This sophisticated process is followed by further ageing in the bottle, usually around 3 years before release. Overall, this is an exceptionally long and precise ageing process that gives the wine its character.
Taste and aroma:
Único has a deep, dark purple colour with a slightly lighter rim. The aromatics feature tones of blackcurrant, liquorice, charcoal and noble wood. On the palate the wine is full-bodied, rich and exceptionally complex, with elegant tannins and balanced acidity. Tones of sweet spice, chocolate and dark fruit dominate. The wine feels concentrated, yet at the same time harmonious and noble.
Único is a highly cellar-worthy wine. Thanks to its structure and long ageing, it has the potential to develop further for 20 years or more.
