Foie gras is one of the most luxurious delicacies - it is a fatty duck liver. You will hardly find a more luxurious combination than foie gras with truffle. 

Duck mousse with truffle is a paste based on crushed duck liver and truffles, which is lightly cooked and pressure-treated to produce a semi-preserved product. It is very tasty because of the contrast in textures between the mousse and the truffle and because of its special truffle flavour.
This practical version of foie gras can be served on toasted bread, made into canapés or used to make fancy cubes or balls.

Remove foie gras from the fridge and leave at room temperature for 5 to 20 minutes before serving to get all its properties.

We recommend pairing with red or dessert wines.

Malvasia lets the ducks live in a free-range area, then the ducks are confined to a room where they are given air conditioning to simulate the onset of winter. The ducks begin to overfeed themselves to ensure they have enough nutrients for the long flight to warmer landscapes. After a few weeks, the duck's liver will have enlarged fivefold.
