Guímaro Camiño Real is a red wine produced by Bodega Guímaro in Soberu in the D.O. Ribera Sacra region. The wine is made mainly from the Mencía grape variety and 20% from other varieties such as Grenache, Caíño Tinto, Mouratón and Sousón. These grapes come from several vineyards planted mainly on slate soils.
All the grapes were hand-harvested together and fermented spontaneously whole in open oak vats during a 40-day maceration. Half of the wine was aged in foudre and the other half in used 225 and 500l French barrels for approximately one year. The finished wine was bottled without fining or filtration.
