Gorka Izagirre, Uixar, D.O.P. Bizkaiko Txakolina, white wine, 0,75l The aromatic white wine Gorka Izagirre is made from two indigenous Basque varieties - Hondarrabi Zuri and Hondarrabi Zerratia. Working with the sur lie aging method gives the wine a complexity and body that has never been seen before. Uixar is perfect with light and fresh dishes such as seafood, salads and vegetables, but it also pairs well with sushi or cream cheeses.

Uixar is made from Hondarrabi Zerratia (80%) and Hondarrabi Zuri (20%) grapes grown in five small vineyards totalling just over 3 hectares in the Etxano area of the municipality of Amorebieta. Uixar represents the evolution of txakoli from a fresh wine to a complex, long-lived wine. The low-yielding vines grown on steep south-facing slopes produce small grapes that are carefully processed to extract all their richness.
To make this wine, the Hondarrabi zerratia variety is aged using the sur lie method for 3 to 4 months to give it robustness and length in flavour. Once the ageing process is complete, a final blending is carried out to achieve the homogeneity of the wine to be bottled.
Straw yellow in colour with greenish highlights, the aroma is a fresh entry of citrus fruits accompanied by apples and fleshy fruits, all accompanied by elegant white flowers. Full on the palate, refreshing and round at the same time. Long and persistent, it leaves a light touch of dried fruit and a well-integrated bitterness.
