Gorka Izagirre, Ama, D.O.P. Bizkaiko Txakolina, white wine, 0,75l The exceptionally hot summer, along with the winery's different approach, allowed Gorka Izagirre to create Ama, an elegant, delicate and silky wine that awakens not only the senses but also the sensibility. Its elegant structure makes this wine fresh and not heavy, a great match for fish, white meat, veal and cheese.

AMA is the latest creation of the winery. Ama means "mother" in Basque and brings us back to the origin, simplicity, elegance and exclusivity. This is a selection of grapes of the Basque variety Hondarrabi Zerratia with an exceptional ripeness point. With the AMA, a new horizon in the evolution of Biscay txakolis opens up. A ripe, delicate and absorbing wine with a complexity that surprises when consumed.

During processing, the must was split in two, with 90% fermented in stainless steel and 10% in new barrels made of fine French oak. After a two-month aging using the sur lie method, the resulting wine was combined and aged for 22 months in tank.

The colour is deep lemon, clean and bright. The golden nuances are a sign of elegance and reveal the maturity of the wine.

Medium and higher intensity of flavour, very delicate, showing white flowers and floral honey. Once the wine has breathed for a few seconds, gaseous and stony flavours emerge. On the palate the wine is dry, silky and round with a pleasant acidity. The nose is reminiscent of smoke, yellow melon and caramel, English cream and lemon tree leaves.
