Casín is considered to be one of the oldest cheeses in Spain, and even in the world, as written records of it date back to the 14th century.

Casín cheese is made from the full-fat, unpasteurised milk of cows of the indigenous Casín mountain breed. 
It also has a special method of production involving kneading the curd several times, which some experts link directly to the Neolithic period and the first settlers of the Iberian Peninsula. Once the cheese has taken its final shape, it is decorated with handmade wooden reliefs (frames) which print the artisan's name, motto, the name of the village, decorative motifs, etc. on the cheese.

The aroma is the distinctive smell of cow's butter with a hint of nuts. The texture of the cheese is soft and buttery on the palate, with great strength. The flavour is strong, spicy, pleasant but dense and slightly salty.
