The delicious large Gordal olives are also often referred to as royal olives. They got the name gordal (fat or fatty) because of their round shape and large size. These olives have a low oil content and are therefore processed almost exclusively as table olives. They have a mild flavour, similar to manzanilla olives, and a firm, fleshy texture.

Olives are an important source of vitamins A and E, iron, calcium, potassium and magnesium. In addition, they contain unsaturated fatty acids and antioxidants, which reduce the risk of cardiovascular disease and cancer.
