Don PX from Toro Albalà is a fortified wine with a strong residual sugar, produced from 100% Pedro Ximénez grapes harvested in August. The grapes are then dried on the ground on traditional jute discs and rubbed by hand to preserve their integrity. The sugar level at the end of pressing is 500 g/l. Fermentation takes place in steel tanks and is interrupted when the alcohol content reaches a predetermined level, with the must mutating with the addition of alcohol obtained by distilling its pomace. It is refined for 12 months in stainless steel containers

It shows a dense and consistent body with intense aromas of dried fruit, chestnut honey, raisins, citrus peel and a light trace of saffron. The mouthfeel is broad, rich, full and pleasantly sweet, softened by a lively spicy freshness.

Recommended to serve with chocolate desserts, blue cheese and aged cheeses.
