This white chocolate is made with cocoa butter from the San Martín region of northern Peru. This chocolate is vegan, the cow's milk has been replaced with ground almonds and supplemented with freeze-dried cherries, making it reminiscent of the classic Basque cake traditionally baked on the farms of the Iparralde region.

Rafa Gorrotxategi is the third generation of Basque pastry chefs of the Gorrotxategi family. He has been a pastry chef since childhood, gradually gaining experience in many practices and courses in Germany, France and Spain itself, where he has worked with the most famous chefs to date. In their 3 Michelin-starred restaurants, one can enjoy his pastry creations such as Xaxu, etc. For many years, Rafa has been one of the world's top pastry chefs and has delighted many gourmets with his unusual techniques and ingredients in creating his sweet masterpieces.
