Pata de mulo is the name given to the oval-shaped cheeses characteristic of several places in northern Spain. In this case, the region of León, specifically Santiagomillas. Although the name translates as 'hoof of a mule', this delicious cheese is actually made from sheep's milk. These cheeses are shaped by hand using linen or gauze and rolled on a table to give them a tubular shape.
Pata de Mulo is aged for approximately 3 months, giving it a mild flavour and a beautifully creamy yet firm texture with a rough rind.
Its shape makes it perfect for sandwiches, for slicing on a cheese board or for serving with membrillo as a delicious dessert.
Raw sheep´s milk, salt, animal rennet and lysozyme (egg derivative).
