The olives for this oil are harvested at the 'PRE ENVERO' stage of ripeness (when the olive juice has the best aroma and taste) and are harvested 7 days before the EVOO he tasted in the restaurant, the 'High End' Masia el Altet EVOO. It has a very high content of polyphenols and antioxidants.
This olive oil is excellent with oily fish, red meat, aromatic cheeses, pasta and all kinds of vegetables and many chefs use it in desserts and baking.
In Masía El Altet, since the seventeenth century, they have relied on vigorous and robust olive trees. They are able to withstand the weather and still produce the best fruit. This philosophy has continued for generations until today, under the current owner Jorge Petit.
