It takes advantage of the natural migration of tuna from the Atlantic to the Mediterranean; nets are set in their path, fish are fished out and board ships where they are sorted by hand. Unusable pieces are returned to the sea, while the rest are further processed in the traditional way.
In this case, tuna tummies are loaded with extra virgin olive oil and seasoned with flakes of salt. Tuna thus retains the best of its taste. We recommend for salads, wine, beer or as an appetizer with pastries.
