La Celestina red wine is made from a single Tempranillo variety and is aged for 12 months in French oak barrels. The wine is round and balanced on the palate, very fresh and juicy with fine acidity.
It goes well with white, lamb and goat meat, it is also an excellent accompaniment to mushroom and rice dishes with meat and truffles.
The Dominio de Atauta winery is located in the province of Soria at an altitude of 1,000 meters. It is a very small valley located at the beginning of the Ribera del Duero region. Despite its small area, it can offer a great variety of soils in terms of depth and composition. A common feature of all soils is calcareous rock, which gives the vine its typical minerality and prevents the roots from reaching the deeper parts of the subsoil. The altitude is one of the characteristic features of this area - thanks to it the grapes ripen for a much longer time. The westerly wind in turn contributes to lower humidity and helps prevent diseases.
