Anima Mundi, Cami Del Xops, D.O. Penedes, white sparkling wine, 0.75l Cami del Xops is an excellent sparkling wine produced from the Macabeu and Xarel-lo varieties by the ancestral method under the baton of the Anima Mundi winery in the Penedès region. The vineyards are located on clay and calcareous soils at an altitude of 180 to 260 m above sea level and the monthly cycles and principles of organic farming are respected in the cultivation and production of wine. This is a pure wine, which is characterized by a bright straw color with golden highlights and fine bubbles. The nose is clean and elegant, the aroma of apples, pears and fennel predominates against the background of pastries. The palate is persistent, fresh, elegant and very fruity. A unique wine that was produced in a limited number of 4,120 bottles.

Cami del Xops is an excellent sparkling wine made from the Macabeu and Xarel-lo grape varieties using the ancestrale method under the direction of the Anima Mundi winery in the Penedès region. The vineyards are located on clay and calcareous soils at an altitude of between 180 and 260 metres above sea level and the cultivation and production of the wine respect the lunar cycles and the principles of organic farming.
The wine, which is pressed directly without de-stemming, is then left to ferment spontaneously in 225 litre barriques. It is made using an old method known as méthode ancestrale, whereby, before fermentation is completed, the mature wine and its residual sugar are bottled for a second fermentation without the addition of any sugar or liqueur.
It is a pure wine with a bright straw colour with golden highlights and fine bubbles. On the nose it is clean and elegant, with a background of delicate pastry dominated by aromas of apples, pears and fennel. On the palate it is persistent, fresh, elegant and very fruity. A unique wine that was produced in a limited quantity of 4,120 bottles.
This wine will complement any appetizer, pickled dishes, seafood or fish perfectly.
Anima Mundi is a relatively new project founded by Agustí Torelló Roca within the well-known family winery AT Roca. Following the philosophy instilled in him by his father Agustí Torelló Sibill, he seeks to maximise the expression of the environment through minimal intervention and maximum biodiversity. The result is a collection of biodynamic and natural wines without added sulphur, which are a pure reflection of the Penedès region.
