Jamón Serrano is a white pig ham. The weight of the ham and the amount of fat are important for the quality and length of maturation. Sufficient fat allows the meat to age slowly and prevents it from drying out.
The best quality jamóns are around 8 kg at the time of sale. The ideal maturity is over 16 months, but some jams are matured for over 20 months and are labelled Gran Reserva.
