Every year, Vidonia is one of the most interesting white wines in Spain and an excellent representative of Canarian winemaking. The wine is in high demand, strictly rationed and always sold out quickly. It comes from organic vineyards that have a high clay content in the soil, which results in brilliant minerality and finesse.

Spontaneous fermentation and maturation takes place in used 500 liter barrels for almost a year. The aroma is rather stony, with only light notes of fruit reminiscent of Moselle or Pouilly-Fumé. The palate is spicy and fresh with stony spiciness, candied ginger, white pepper and white flowers. It's fantastic on the tongue, with plenty of energy from the minerality and early-harvested grapes. You can feel high elasticity in your mouth. Despite its freshness, the wine remains soft and crystalline with a long aftertaste.
