The palette is a designation for the front leg of an Iberian black pig. It weighs around 4.5-5.5 kg - thanks to its smaller height and less roundness, it can be cut into perfectly thin slices. It is characterized by its more intense and distinctive taste. In some areas of Spain, such as Catalonia, the pallet is even preferred over jamon for its properties.

The ham comes from an Iberian pig that has a special genetic trait. Its muscles are so uncompromising that they allow fatty acids to penetrate it. The slice of Iberian ham is literally interwoven with fat veins, and therefore it is perfectly tender. Due to its weight, the pallet matures for a shorter time than jamón. This specifically at least 18 months. The fourth generation of the Blázquez family has been taking care of the high quality of hams since 1932.
