Unctuous blue cheese with an intense aroma and flavor, in which the notes of mushroom, salt and pepper stand out.
Among the starter culture strains, the leading role is the gas-generating heterofermentative bacteria, responsible for the generation of caverns in the paste. The important production of lactic acid during the fermentation process facilitates a good implantation and development of Penicillium roqueforti.
The cheese is refined in a chamber with humidity saturation and a temperature of 11ºC during the first 4 to five weeks, passing a second refining period at a lower temperature and the cheeses are wrapped in aluminum. This last phase is key to guaranteeing an intense lipolysis process.
The cheese is very intense, so we recommend pairing with beers, fuller red wines, whiskey, bourbon or sherry (Oloroso).

Granja Cantagrullas is the project that Asela and Rubén started a decade ago seeking to add value to the milk of the Castilian breed sheep from the family farm. All the elaborations that are carried out here are based on raw milk and refined milk in which the surface flora acquires great prominence.
Currently in this cheese factory half a dozen cheeses of different technologies are made, in most cases giving rise to unique cheeses with enormous identity, which makes this workshop a very innovative space.
