In the north of the country, along the coastline and in the local mountain ranges, cheese made from cow's milk predominates. In Galicia and Asturias in particular, most cheese is made from cow's milk. Rey Silo is a semi-soft cheese which is matured with the help of noble moulds. Tetilla is a soft cheese, known for its shape, which resembles a woman's breast. The cow's cheese with the blue mould Xavel or Cabrales from Asturias is matured in the traditional way in limestone caves, where it is very humid and affected by cave yeasts and moulds.
