Gin was originally made in Menorca during the British occupation in the early 18th century. Briti soldiers reminded themselves of the tradition of their home. Xoriguer is the result of the distillation of high-quality tartar alcohol together with a selected juniper from the mountainous areas of the island and other herbs whose origin and identity are very carefully guarded. Information about how and how many herbs are added to the distillation process is known only by members of the Pons family. Interestingly, wood is used as a fuel for distillation. Tradition is what best describes the gin Xoriguer. At the end of the production process, Xoriguer is stored in wooden barrique barrels.
