This cava comes from the vineyards of the Bitlles river in Alt Penedès near Barcelona, and the vine grows here on highly calcareous soils. Recaredo winery is governed by the principles of biodynamic agriculture,   which consists in using only organic fertilizers and the principles of an ethical approach to protecting the environment and maintaining biodiversity. After the first fermentation and subsequent two-week ripening in the barrique barrels, the wine is stored for 10 years in a bottle closed with a cork where the second fermentation takes place. The incredibly elegant wine with fine bulinkins is comparable to the best champagne.
