This balsamic vinegar is made from the finest Pedro Ximénez grapes that are dried in the Spanish sun and then subjected to a lengthy process of fermentation and ripening. Vinegar is aged for 5 years in American oak barrels using the method of dynamic aging (the "Criaderas y Soleras" method).

Subsequently, vinegar is discolored using 100% natural methods and does not change the color of the food in which it is used. It is characterized by a unique aroma of raisins, caramel and honey, and its unique sweet-sour taste makes it an excellent flavor.
