Junco - soft sheep's cheese has a very strong greasy taste with fruit tones and light tannins. It has a firm texture on the surface, but inside it is creamy and elongated.
The processing is unique because the fermentation of milk is carried out by thermophilic bacteria, thanks to which lactic fermentation takes place and the cheese becomes soft and very creamy. After removal from the mold, the cheese is dry-salted with Grancilla-type salt and pulled along the edge with a pine bark sheet to decide its shape during ripening.
Refining of this cheese is characterized by washing the rind, which begins 7 days after production. Washing is performed with water inoculated with a bacterium known as red ferment.
We recommend combining the cheese with rosé sparkling wines, ciders, red wines with strong acidity and apricots or grapes.
