Jamon serrano : Jamon is the mark for the hind leg of the swine. The serrano name again tells of the type of pig from which the ham was made - that is, a white domestic swine. Jamon (juice) is more juicy compared to the pallet (cane) and the meat is evenly gently spread with fat, which gives the ham the right taste. The muscle is larger than the pallet and therefore requires longer aging times. Slicing larger snails is generally more convenient than smaller ham.
