Ham is made from Iberian pigs that have a special genetic feature that makes the muscles so compact that they allow fatty acids to penetrate into it. The Iberian ham is literally intertwined with the veins of fat and is therefore very delicate. The term "de bellota" means that the pigs are exclusively fed with acorns and grass in the wild. The ham matures for 36 months.
