This exceptional wine, thanks to its complexity of flavors, ranks among the best wines offered by Txakoli winery Gorka Izagirre. The autochthonous Hondarrabi Zerratia variety, whose grapes are very small and weighs only around 100 grams, is used in production. Grapes are harvested manually and taken to a cryomaceration that lasts 12 hours. Subsequently, the grapes are finely pressed. To remove sludge, static decantation takes place for 36 hours at 10 ° C. Pure cider is then fermented at a very low temperature of 14 ° C to preserve the fruity taste. After 18 days, maturation takes 8 months to mature yeast. Every day, the wine is mixed to achieve typical flavor complexity.

The greatest benefit of this wine is its ability to aging in a bottle, which slows down its freshness and youthfulness. For five years from bottling to bottling, it is slowly developing and gaining exceptional volume, texture and elegance.
