The Ànima Negra winery from Mallorca was founded by three friends Francesc Grimalt, Pere Obrador and Miguel Ángel Cerdà. They decided to make authentic wines from Mallorca based on autochthonous varieties. Near the town of Felanitx, they rebuilt the former dairy into one of the most famous wine cellars in the Balearic Islands. In the first year, they produced only two barriques of the local Callet variety. For the next two years, they served as a de facto study project - they tried to make for them an ideal well-structured wine from this typical Mallorcan variety. Most of the wines from Mallorca at that time were simple and did not go through any sophisticated maturation process. Their vineyards in the Son Negre area of ​​Mallorca are characterized by a very windy environment (sea air), small production (less than half a kilogram of grapes per shrub) and extreme terroir: very poor soil, considerable minerality, small water reserves in the soil, and many other fruit trees in the vineyard. The specific conditions in this vineyard force winemakers to work with old shrubs that have deep roots to find the necessary nutrients. This makes the winery's production very small and complex at the same time.
