The white, dry wine from the Bizkaiko Txakolina wine region is made from Hondarrabi Zuri Zerratia and Hondarrabi Zuri from vineyards in Kortezubi, a small Basque town famous for its prehistoric caves and a UNESCO World Heritage Site. The soil here is clayey calcareous.
Fermentation takes place in stainless steel tanks, then the wine is stabilized for 4 months in contact with yeast.
