Cava vinegar from one of the most prestigious sparkling wine producers in Spain, Augustí Torelló Mata. Dry sparkling wine, which matured for 12-16 months and where fruit flavor most prevails, is used for production. The wine is oxidized at 25 °C for 5 to 8 days to remove carbon dioxide and create optimal conditions for the conversion of alcohol to vinegar. Subsequently, vinegar is poured into barricade drums and matures for 2 years.

Thanks to this long and gentle process, an unforgettable balsamic vinegar produces a very intense fruity aroma and an excellent taste. It is suitable for various meats, carpaccio, fish, legumes, oriental cuisine and desserts - it is excellent with vanilla ice cream!
