Brisura is made by chopping truffles into millimetre-long pieces, so it is ideal for flavouring sauces, risotto or pasta, for example. Add the Brisura and the juice in the last step of cooking to preserve the full flavour and texture.

Truffle Tuber Aestivum is harvested from May to September in the Mediterranean forests. It has a black outer colour with characteristic pyramids, a light brown colour inside and white veins, which are distinctive features from winter truffles, as well as a more delicate aroma and flavour.

Arotz has set in motion a complex and efficient mechanism for harvesting this mushroom. Once discovered in the evening, they are processed the following day. Founded in 1960, Arotz has a dominant market position in the production of Spanish truffles, chestnuts, mushrooms and berries.

Produced manually by adding only water and salt before the sterilisation process.
