We recommend that you serve it chilled to a temperature of 8 - 15 ° C and open the bottle 30 minutes before pouring.
Cava Mestres Clos Damiana is produced according to the traditional Champanoise method, where the primary fermentation is in French oak barrels and then the secondary fermentation in bottles that are rotated by hand. The aging period in barrels is 12 months and then more than 140 months in cork bottles. The vines come from more than 60-year-old vineyards planted in the best areas of the Penedés region.
Mestres Winery is one of the oldest producers of Cava with a history dating back to 1312. The first sparkling wine was bottled in 1925 and they still use the traditional original grape varieties and winemaking techniques preferred by their ancestors.
